Shredded Chicken Salad Recipe

This shredded chicken salad recipe is not only healthy and delicious, but it's also really easy to make!

Ingredients: 1 lb. boneless, skinless chicken breasts 1/2 cup plain yogurt 1/4 cup mayonnaise 1 tablespoon Dijon mustard 1 tablespoon honey 2 cloves garlic, minced 1 teaspoon smoked paprika salt and pepper, to taste 8 cups mixed greens 1/2 cup red grapes, halved 1/4 cup chopped walnuts Instructions:

  1. Preheat oven to 375 degrees F. Season chicken breasts with salt, pepper and smoked paprika. Bake for 25-30 minutes or until cooked through. Allow to cool slightly before shredding.
  2. In a large bowl, combine yogurt, mayonnaise, Dijon mustard, honey, garlic and smoked paprika. Stir in the shredded chicken until coated. Season with salt and pepper, if needed. 3. In a large salad bowl, combine mixed greens, red grapes and walnuts. Top with the shredded chicken salad and serve immediately. Enjoy!

-juice of 1 lemon
